old-fashioned mothering made new again
An easy recipe that puts those $7 bags of granola to shame.
*gluten-free
Prep time: 10 min
Total time: 40 min
Makes: 3 cups
What You Need
1 6 oz bag of slivered almonds
3 cups of gluten-free oats
3 T packed brown sugar
1 tsp ground cinnamon
1/2 cup defrosted canister of organic frozen apple juice concentrate
1 8oz bag of organic unsweetened shredded coconut
1 5 oz package of organic dried montgomery cherries (or other dried fruit)
1 cup of organic raisins
Make It
Preheat oven to 300.
In a large mixing bowl, combine almonds, oats, brown sugar and cinnamon until evenly mixed. Pour apple juice concentrate and stir until evenly coated. Pour evenly onto a baking sheet lined with parchment paper. Bake for 20 minutes, stirring every 5-10 minutes paying close attention to how brown the almonds are getting. Stir in the coconut and put back in the oven for 10-20 minutes until granola looks "toasted" and the cereal is slightly moist to touch. Remove from heat and allow to cool. Once cool, toss in cherries and raisins and place in a air-tight container.
Variations
Good combos you can substitute ounce for ounce: Pecans, cranberries and golden raisins; Walnuts, dried blueberries, golden raisins. I think you get the gist of it.
